Sucraid or other enzyme replacement for sucrose for all phenotypes may be required for this recipe.
|Goldman's Squash Latkes|
3 cups grated zucchini or cooked spagetti squash
1 teaspoon salt
1/2 cup freshly grated Parmesan cheese
2 large eggs beaten
1 tablespoon each, green onion, parsley, chives
1/3 cup oilve oil
Fresh black pepper to taste
1/2 cup sour cream
2 teaspoons lemon juice
Squeeze excess liquid from grated zucchini and toss with salt. Combine all ingredients except oil, sour cream and lemon juice. Heat oil and fry latkes. Using an ice cream scoop, spoon batter into hot oil. Flaten mounts with spatula. Cook 2-3 minutes on each side. Drain excess oil on paper towels before serving. Mix in small bowl sour cream and lemon juice. Top each serving of latkes with sour cream mixture, and garnich with chives, or freshly minced parsley.
