Goldman's Chanukkah Salad

1 cup finely cubed fresh past tomatoes
1 cup finely diced cucumber
2 tablespoons fresh dill
2 tablespoons parsley, minced
2 tablespoons fresh squeezed lemon juice (no seeds)
2 tablespoons extra-virgin oilve oil
1/2 teaspoon sea salt
Fresh ground black pepper
1 5 ounce block of Feta Cheese, crumbled


Combine all ingredients except cheese and teaspoon of dill and toss well. Add 1/2 block of crumbled cheese. Serve in small salad bowls and top with remainder of cheese and pinch of chopped fresh dill.
