Sucraid or other enzyme replacement for sucrose for all phenotypes may be required for this recipe.
1 large yam peeled (not to be confused with sweet potato)
1 teaspoon fresh squeezed lemon juice
1 tablespoon whole wheat flour
1 large egg, whipped
1/2 teaspoon sea salt
1/8 teaspoon baking soda
2 tablespoons olive oil
Fresh pepper to taste
Sour cream if desired as topping
Pulse ingredients, except oil, together in food processor until crumbly and just mixed. Cook on heated skillet 3-5 minutes each side until each side is browned.
