Sucraid or other enzyme replacement for sucrose for all phenotypes is required for this recipe.

Susan's Cherry Pie Delight

1 pound fresh cherries pitted
3 tablespoons cornstarch
1/4 cup crystaline fructose or 1/2 cup dextrose
1/4 teaspoon almond extract
1 teaspoon lemon juice
pinch of salt
Red food coloring if desired


In food processor pulse together 1/2 pound pitted cherries, cornstarch, fructose/dextrose, almond extract, lemon juice and salt.  Transfer mixture to 2 quart sauce pan and add remaining pitted cherries. Heat until thickened, stirring continuously. Add drops of red food coloring to make filling sauce as red as pitted cherries if desired. Chill. Serve in small dessert dishes.
