Mattisoff Family's Sucrose-free Pound Cake

6 eggs
1 cup granulated fructose
3/4 cup soy protein powder
3/4 cup hemp protein powder
1 teaspoon baking powder
1 cup salted butter
1 teaspoon vanilla extract
3/4 cup pecans


Line a bread loaf pan with parchment paper and spray paper with Pam. Separate eggs and beat whites until stiff peaks form. Slowly add in 1/2 cup fructose and continue beating until peaks become glossy and stand nearly straight up. Reserve. In a separate bowl beat butter 1/2 cup fructose and vanilla until creamed. Then on low speed add in soy and hemp powders until combined. Ass nuts. Fold in egg whites gently until just mixed. Bake 325 degrees F about 1 hour until toothpick comes out clean. Cool in pan for another 45 to 60 minutes then slice into thin pieces and top with fruit or whipped cream.
