Mattisoff Family's Coconut Chip Cookies

1 stick butter
1/2 cup vegetable oil
1 cup granulated fructose
3 eggs
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup soy protein powder
3/4 cup hemp protein powder
1/2 cup unsweetened coconut, shredded
1 cup chopped almonds, Brazil or hazel nuts


In large mixing bowl cream together butter, oil, fructose. Cream in eggs, vanilla, baking soda, and salt. Add in soy and hemp protein powders, nuts and coconut. With an ice cream scooper, place dough balls on non-stick cookie sheets. Bake at 375 degrees for 12 minutes. Cool before storing. Will yield 24 cookies at 3 grams starch each.
