Finches' Hollandaise Sauce

2 sticks butter, melted
4 egg yolks
2 tablespoons fresh squeezed lemon juice
pinch of freshly ground black pepper


This is a wonderful sauce to make vegetables more appealing to a child (maybe even a husband).

Using a double boiler, whisk together egg yolks, lemon juice, and pepper. It will take about 10 minutes for the yolks to thicken, then add in melted butter in small amounts until all is incorporated stirring constantly. Whisk until creamy smooth. This is delicious over just about any vegetable.
