Julie's Holiday Pumpkin Pie Filling
Ingredients

1-1/2 cups unsweetened pumpkin puree
1-1/3 cups evaporated milk
2 eggs
1 teaspoon ground cinnamon
1 teaspoon ground ginger
Pinch of grated nutmeg
3/4 cup granulated fructose
Pinch of salt
1 tablespoon soy flour or soy protein powder


Directions

Mix all ingredients in a food processor, then pour in baking shell of choice. Bake at 350 degrees F 35 to 45 minutes until set.
