|Fried Chicken Nuggets|
2 boneless chicken breasts, chunked into nugget portions
1 package pork rinds, crushed very finely with rolling pin in large Zip-loc baggie or crumbed in food processor
3 egg yolks beaten
1 cup canola oil
Beat egg yolks until frothy. Coat chicken pieces with egg. Then coat each piece of chicken in crushed pork rinds. Heat oil in large skillet, when hot drop in each piece of coated chicken. Cook until golden brown. It will come out somewhat like extra crispy chicken but your child cannot have starch it is a good substitute.
