Glemser's Fried Green Tomatoes

1/2 cup soy flour (phenotype C or 1/2 cup ground fried pork rinds all other phenotypes)
1/2 cup grated Parmesan cheese
1/4 teaspoon cayenne powder
1/4 teaspoon fresh cracked black pepper
1/8 teaspoon iodized salt
1 cup buttermilk
1 cup olive oil
2 green tomatoes, sliced about 1/4 inch thick


Pulse in blender, flour (or rinds), cheese, seasonings until well blended. Pour out onto plate. Pour buttermilk into separate bowl large enough to dip tomatoes in. In large skillet over medium heat, add oil. Dip each slice of tomato into buttermilk and then dredge in flour to coat. Fry in oil until each side is golden brown, roughly 2 minutes per side. Drain on paper towels before serving. Garnish with crumbled bacon if desired.
