Sucraid or other enzyme replacement for sucrose for all phenotypes is required for this recipe.
|Glemser's Mexican Squash Casserole|
6 crookneck yellow squash, cooked and cubed or sliced
1 medium yellow or white onion, chopped
1 tablespoon olive oil
1 cup extra sharp cheddar cheese, grated
1 4-ounce package cream cheese
3 tablespoons milk
1/2 cup salsa
pinch of salt and pepper
In a medium frying pan, cook olive oil and onions until tender. In a 1 quart sauce pan on low heat, combine cheeses, garlic and milk, cooking until cheese melts and forms a thick sauce. Add salsa to cheese sauce. Add squash to deep baking dish, add in onions and cheese mixing well. Bake at 350 degrees F for 20 to 25 minutes.
