|Micky's Zucchini Wedges|
2 large zucchini, sliced in 1/4 inch wedges
1 3-ounce package of cream cheese
pinch of paprika
Preheat broiler placing oven rack on higher setting. Lay sliced squash wedges on cookie sheet and top with cream cheese and dust with paprika. The zucchini will initially be slippery so consider piping the cream cheese onto each wedge. Broil for 1-2 minutes until cheese is just slightly golden brown. The zucchini will be hot but still crunchy.
I have had all kinds of guests turn their noses up at squash only to be pleasantly surprised. The trick is not to overcook the zucchini.
