2 tablespoons extra-virgin olive oil
3 cloves garlic
3/4 cup of roasted red peppers, peeled or jarred piquillo
1 teaspoon Hungarian paprika
1 teaspoon flavored vinegar of choice
2/3 cup sour cream or unsweetened plain Greek yogurt
In food processor pulse together all ingredients until smooth.
Let flavors meld 1 hour in refrigerator before using.
