Rhonda's Roasted Cauliflower with Lemon Dressing


1 head cauliflower, cut into florets
6 tablespoons olive oil
1 cup fresh parsley, chopped
1/2 teaspoon fresh lemon zest
2 tablespoons fresh lemon juice
1/2 teaspoon Mrs. Dash table blend
Salt and pepper to taste


Preheat oven to 425 degrees F. Using a non-stick rimed cookie sheet, roast cauliflower until tender (~ 20-30 minutes). In blender combine all other ingredients and pulse until well mixed. Transfer to mixing bowl combine all ingredients.
