Ingredients
2 skin on, turkey drumsticks
2 skin on, bone in turkey thighs
2 tablespoons olive oil
1 medium onion, chopped
2 leeks, sliced in 1/2" wedges (white and light green portions)
6 celery stalks, sliced in 2 inch wedges at deep angle
8-10 cloves garlic, minced
1/2 cup fresh parsley, chopped
2 teaspoons thyme
1/2 teaspoon dried sage
6 cups chicken broth
8 carrots, halved and tops removed
1/4 cup chopped chives
1 large can stewed tomatoes
Directions
In deep oven proof casserole dish, place turkey in first and
follow with rest of ingredients. Bake for 2-1/2 to 3 hours until meat is
falling off bone and liquid is reduced by 3/4ths. To plate, transfer
turkey to platter and garnish with juices, fresh parsley and fresh
chives. Place carrots, leeks, tomatoes, and celery around edges.
