Sucraid or other enzyme replacement for sucrose for all phenotypes may be required for this recipe.
Carrot and Daikon Salad

Ingredients

2 cups sliced carrots (especially nice if you can use orange, yellow and red carrots)
2 cups thinly sliced daikon
1 cup sliced scallions (one inch pieces)
2 tablespoons black sesame seeds
1/2 teaspoon salt


For dressing:

3 tablespoons rive vinegar (unsweetened)
2 tablespoons canola oil
1 tablespoon peeled and grated fresh ginger
1 tablespoon granular fructose
2 teaspoons grated fresh garlic
juice of one lime
Zest of one lime
Pinch of salt

Directions

Salt daikon in a mixing bowl and let sit 10 minutes. Drain. Combine daikon, carrots, scallions, and sesame seeds. Combine dressing ingredients and toss through vegetables. Chill before serving
