Ingredients
1 cup diced red bell pepper
1 cup diced yellow onion
3 tablespoons curry powder
3 tablespoons minced fresh ginger
1 seeded and diced jalapeno
2 tablespoons minced garlic
8 cups chicken broth
2 cans julienned bamboo shoots
2 cups cooked chicken
2 cups fresh chopped spinach
1/2 cup fresh cilantro
2 tablespoons fresh squeezed lime juice
Salt and pepper to taste
Directions
Place all ingredients into a stock pot and bring to boil. Serve
piping hot.
