Fructose Microwaveable Lollipops


1 cup (dry measured) crystalline fructose
1/2 cup (wet measured) light corn syrup
drops of LorAnn Gourmet Liquid Food Coloring
1/2 dram (1/2 teaspoon) LorAnn Gourmet Flavoring
Lollipop mold of choice with sticks (LorAnn or Wilton--get deep molds)


The LorAnn flavoring as very concentrated extracts, far more than what you can find in a grocery store.

Correct measuring is extremely important for this recipe to work correctly.

In a 4 cup Pyrex measuring cup add fructose and corn syrup. Microwave 3 minutes and 10 seconds covered with plastic wrap. Mixture will be at soft ball stage and very hot. Remove from microwave and stir making sure all fructose is dissolved. Return to microwave and heat for another 3 minutes and 10 seconds. Mixture will be at hard ball stage and extremely hot. Remove from microwave and carefully add 1/2 dram of flavoring and drops of desired food coloring. Mix well and pour into molds as fast as possible. Insert sticks immediately. When cooled cover lollipops with plastic wrap to keep from sticking together and store in air-tight container.

This cooked mixture can also be spread on greased cookie sheet, scored, and later lifted and cracked when cooled.
