Carrot and Orange Soup | |
Ingredients 500g carrot, diced 1000ml water 100g onion, white or yellow, chopped 60ml orange juice 1/2 teaspoon salt 1/2 teaspoon black pepper 5g coriander, chopped (reserve some for garnish) 40ml cream, whole (20ml will be used for garnish) Directions Place all ingredients, except cream, in a 2 quart sauce pan and simmer 30 minutes. Move to blender and puree. Add back to saucepan, add cream and re-heat. Garnish with coriander leaves and dolip of cream. Use Dinner |
