Pam's Sweet Potato/Yam Casserole | |
Ingredients 3 cups mashed sweet potatoes (not canned) 2 eggs beaten 1/2 cup evaporated milk 2/3 cup honey 1 teaspoon pure vanilla extract (McCormack) 1/4 cup melted butter whipping cream sweetened with granulated fructose or dextrose or Cool-whip non-dairy topping (sweetened with corn syrup) Directions Mix all ingredients in a large mixing bowl and spread in 8-12 remkins or small pyrex glass dishes. Place remkins in a 9x13 bakeing pan filled with water half way up remkin. Bake at 350 degrees 20 to 30 minutes. Serves 8 to 12. Serve hot as side dish for holiday or cold with whipped topping for a dessert. Sweet Potatoes/Yam's have about 25 grams of starch per 100 grams, for small children use smaller dishes to keep serving size to 12-15 grams per serving by cutting serving size in half. Use Side dish |
