Grandma's Carrot Cake

1 cup Crisco shortening
2 tablespoons chrystaline fructose
4 eggs
1/2 cup water
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons cinamon
1 teaspoon nutmeg
1/2 teaspoon salt
1/2 cup chopped pecans
3 cups grated carrots


Cream shortening, fructose, and eggs. Then add water, flour, baking powder, baking soda. spices, and salt and continue mixing. Reduce blender speed to low and add pecans and carrots. Spray 9x13 baking pan with Pam or use parchment paper to prevent sticking. Bake at 350 degrees F (175 degrees C) for 35-40 minutes until done. Yields 16 thinly sliced servings.
