Sucraid or other enzyme replacement for sucrose for all phenotypes is required for this recipe.
|Susan's Coconut Delight|
1-1/2 cups unsweetened coconut
3 cups half-and-half
1-1/2 tablespoons unflavored gelatin
1 teaspoon vanilla extract (clear is best)
Cool-whip (fructose sweetened)
1 tablespoon chrystaline fructose
Place all but a few tablespoons of coconut, 3 cups of half-and-half, unflavored gelatin, and fructose and puree. Then cook mixture over low heat stiring constantly until fructose and gelatin are dissolved. Add remaining coconut and flavoring. Chill until firm. Toast remining coconut in oven or frying pan until light brown. When coconut mixture is completely chilled divide into 6 small decorative bowls and top with Cool-whipe and toasted coconut.
