Sucrose-free Gummies

3 envelopes Knox unflavored gelatin
1/2 cup hot water
1-3/4 ounce package of lo-cal jelly pectin
1-1/2 cups water
1 tablespoon liquid sucralose (not powdered Splenda)
1-1/2 teaspoons lemon juice
2 teaspoons fruit flavor extract
1/2 pound powdered fructose


First prepare a jelly roll pan to recieve gummies. Take 1/2 pound of powdered fructose and evenly spead across the pan. Then take plastic pop bottle cap and press holes in powdered fructose to bottom of jelly pan. Do not move jelly pan once holes are in place.

In a 1 cup pyrex glass measuring cup mix gelatin and hot water until gelatin is dissolved. In 1 quart saucepan combine pectin and 1-1/2 cups water and cook stiring constantly until boiling. Once boiling cook on medium heat another 10 minutes. Then add gelatin and stir. Add remaining ingredients and mix.

Using a teaspoon or dessert spoon fill each hold with mixture. Allow to set. Remove gummies and shake off powder. Makes about 50 pieces.
