Mock Mulligatawny Soup (India) | |
Ingredients 50g onion, white or yellow, chopped 125g carrot, chopped 125g swede, chopped 50g apple, peeled, cored, chopped 50g bacon, chopped 50g butter 25g almond flour 15g curry powder 15g tomato puree 25g no sugar added peach jam 1000ml beef sotck pinch of clove, ground pinch of mace, ground 50g rice 45-50g cream, whole Directions In frying pan, fry onion, carrot, swede, apple and bacon in butter. Add almond flour, curry powder, tomato puree, and no added sugar jam, simmering and constantly stiring. Add stock, and spices, and cook on medium heat 30 minutes. At this point you can either strain and return juices to stock pot or puree mixture and add to stock pot, then add rice and cook 12 minutes. Just before serving add in cream. This is a nice hot spicy soup for a winter lunch or dinner. Use Lunch or Dinner |
